Beneath the main square of Tolfa grows a two-hundred-year-old ivy: over two centuries it has watched the history of the village unfold. From this deep-rooted presence comes the name L'Edera, today a restaurant and three rooms in the heart of the village.

Our story

Ancient roots,
hospitality of today

For over twenty years Ristorante l'Edera has been a fixture of Tolfa: a dining room overlooking the Maremma of Upper Lazio and a kitchen built on local, zero-mile produce. Around that table our three rooms were born (La Rocca, Ginestra and Sughera) for those who wish to stay and sleep in the village.

Like the two-hundred-year-old ivy from which we take our name, it is a story rooted deep in time and still growing.

Tolfa is a stone village at 470 metres, among hills and pastures. All around, woods of cork oaks and chestnuts, free-roaming herds and trails to walk on foot or on horseback.
